Welcome to the forum. Climbing to hot may be an indication of the wire being grounded somewhere or the gauge itself being bad or even the wrong sensor in relation to the gauge itself, meaning it is simply reading wrong. Also make sure the fluid level itself is not leaving air in the system.

It may also be connected that you are using a motor that was not built after 1973 in a '91 vehicle.  The sending unit and gauge may not be in the same ohm range.  To be sure I suggest you install an after-market gauge and be certain of the temp.
An unrelated question: how did that truck pass the California Smog Test?
