Is it a sign that I've been under the dash too much if I can identify where most of that wiring goes?

Yes it's a sign. If you can identify the stuff that didn't belong under there than that's a BAD sign.

I got the dash out of the parts car today so tommorrow's project will be installing the dash harness in the wagon. I hope it will be done in a day but I don't know how long I'll be able to lay under the dash.

 Normaly I would but in this case I can't lift it out in my condition and won't have any help on a week day. I wish I could pull the whole dash out like I did in the parts car but I'm not gonna take a chance pulling out the windshield without breaking it. I'll just have to be a contosoinist and take frequent breaks.
